With a little luck/planning you might catch a "gallery night" on Palafox. They make the strip pedestrian friendly and set up street vendors. There's also a decent farmer's market on Saturdays just north of Vinyl Music Hall.

Check out Fort Pickens. Some cool hiking/biking trails, and of course the fort itself. The beaches there are also nice and free of so many people.
Walking on the pier is a must. So much cool wildlife that you can see. Sea Turtles, dolphins, sharks, manta rays, jellyfish, etc. We see cool stuff every time we go.
Peg Leg Pete's and Shaggy's are the only 2 on the beach we've been to since we moved down here, and both are good.
Dolphin tours are cheap and fun.
As other's have said, the naval museum is great.
Kingfisher is probably our favorite, its a couple of miles west of downtown. And Joe Patti's is a must.
There are plenty of food options, shops, and bars downtown, and its fun just to browse Palafox.
We've been here since January, and really haven't eaten at that many restaurants because we cook a lot, and with Joe Patti's being two miles away, its an easy decision.

Sidelines Sports Bar is decent, typical sports bar food but I think it’s a good option as far as food on the actual island.

If you like hole in the wall type places (not upscale) there is a bar on the back side of aloha wine and liquor. Open air with a small marina to look at. Corn hole boards and cold beer.

PCB is a great place to kick back and relax. The wife's (no pics) family has had annual family vacations there for over 50 years.
Peg Leg Pete's is decent, they usually have good musical entertainment during the summer. For years one of the condos we rented at San Souci was on the western end with a balcony facing the pool, at night we would sit out there and listen to the music playing from PLP.
Along with the museum and Fort Pickens (there's also a snorkeling area there), there are also a number of gun ranges (not on PCB, but in Pensacola, Gulf Breeze, etc). We went to Oak Ridge this year and I fell in love with a Tokarev 12ga.
If it's Blue Angels weekend, get there early and be prepared to "shelter in place" (sort of like living next to or on LSU's campus when LSU and Bama are both highly ranked and playing in Death Valley).
Take the trolley for a ride from one end of the island to the other (and back). When going east (along Via de Luna), keep an eye out on the bay side and you may just see something out of this world.

We’ve been going there for the last few years during the summer. Have enjoyed McGuires, Grand Marlin, Flounders, Rodizio (Brazilian style steakhouse). I don’t care much for red fish blue fish or the shrimp basket on the beach. Casino beach at the foot of the pier has decent food. There is a good ice cream place in the parking lot beside the shrimp basket

Flounder's was way better than I expected
Grand Marlin very good
Jackson's in downtown was pretty good, but I am not really a steakhouse person
Drift by the bridge is a more modern seafood that I enjoyed

Get reservations the The Global Grill in downtown Pensacola. Note - Its not a grill per se, it's more of a small plate /tapas restaurant.

Never found much good food on the beach and still trying to figure out downtown.
All the good food is on the north side.
Sky pizza is very good.
Taqueria Asador at Davis Highway and I-10 is AWESOME.
George Bistro is supposed to be good.
