By starting with Episode 1, you lose the biggest plot twist of the franchise which occurs in the Empire Strikes back. The impact of the reveal is TOTALLY lost.

I'm ok with this...
I'll preface my statements by saying I saw the original star wars movie in the theater in 1977. So I've been there since the beginning. With that being said.....
I feel that vader's rampage in Rouge 1 is one of the best if not the single best scene in the franchise. The sheer brutality he shows in that is off the charts and gives great insight into vaders character. However the back story on how and why he is so brutal is lost without the prequels. It shows the depth of his pain and anguish established in 1,2 and 3.
And while I'm not really a massive fan of the prequels, they are VASTLY better than episodes 7,8 and 9. What they did to Luke in those movies was a tragedy. Fortunately, the producers of the Mandalorian saw fit to redeem Luke's character when he fights the dark troopers (which is also a top 5 scene in the franchise.)
So in my mind, as bad as those moves are when compared to the originals, they still have their place.

I would say it depends if you're watching with someone new or not.
Definitely go with the "New Hope, Empire, THEN Prequels" if the person doesn't know the big twist (say for young kids, etc.)
Otherwise the glaring change in effects may not be idea when sandwiched between Empire and Return.

Just watch them in original release order. That’s the best way to watch anything if you’ve never seen it before IMO (and honestly even if you have).
