Brussels sprouts recipes

Anyone have any go-to, east Brussels sprouts recipes?

I’ve been shredding them. Did this the other night.
1 lb Brussel sprouts, shredde
1 shallot (could really use any onion), sliced
4 or 5 slices bacon cut into 1/2 inch pIeces
Brown bacon, render fat, remove bacon. Brown down the shallots, then deglaze the pan. Throw in the shredded sprouts. Cook them down to desired consistency/crunch level. Add back the bacon. I tossed with a creole mustard vinaigrette. Topped with blue cheese crumbles.
Was pretty tasty.

I clean them. Sometimes take off outer layer. Cut the bottom if they are brown.
I cut in half.
Put in pan.
I just do olive oil (a lot), salt and pepper.
Oven, 400 degrees.
Move them around every once in a while.
They end up crispy on the outside.
You will have to probably season again at the end.

This will be similar to the ones you get at asian restaurants. You can add cut up pieces of bacon to give it an extra pop.
2 lbs brussel sprouts, halved
4 tbsp. olive oil
Juice & zest of 2 lemons
Kosher salt
6 basil leaves, torn
1/2 chili pepper, chopped (we use jalapeno)
1 bunch cilantro
Preheat oven to 400 degrees (or if you want to roast them longer and not run risk of burning them, 350-375 degrees)
Toss sprouts on baking sheet with olive oil and 1 tsp. salt.
Roast for 35-40 minutes. If lower temperature, maybe longer. Outer leaves should be crispy.
While hot place sprouts in bowl and stir in 1/4-1/2 cup sweet chili vinegar (see recipe below). Stir in lemon juice and zest, add salt to taste and garnish with basil leaves, cilantro and chili pepper.

Mix 1 cup sugar, 1 cup white vinegar, 1/2 tsp. black pepper, 1 1/2 tsp. crushed dried red pepper, 1/2 head garlic - cook over low heat until sugar dissolves, about 5 min.

You can air fry them. (Yeah, Rat's on an air frying kick.) I did this for the first time recently because my wife loves them at Zea.
I used frozen ones. Microwave for a minute - enough to thaw them for cutting in half. Toss in olive oil. Air fry them until they get charred.
I need a good dressing for them, though.

Roast however you choose then toss with bibimbap sauce. Sauce can be used for a bunch of things.

Clean and half sprouts
Cut side down in a hot pan with reserved fat
Roast hard
S/p
Red wine vinegar to deglaze
Pat of butter
Add lardons
Toss and eat

I am a Brussel Sprout fan and the best I have ever had BY FAR are at Luke in New Orleans. I don’t have the recipe but if you can find it online try it.
I know they are flash fried and then they toss them in some kind of buffalo cheese sauce that is crazy good.

I’ve been doing mine just like this, but in a cast iron skillet on the egg with a lot of duck fat on top.

Good luck. They can be good and it is brussel sprouts. Brussels is a city. Like St. John is an island and St. Johns is a university. Geography and food lesson all tied into one.

I’m doing some tomorrow. I’ll halve and trim them, then toss in 2 tbsp of olive oil, a packet of ranch, and a few cloves of minced garlic. Baked at 400° for 25 min.
