Meat to add to Mac and Cheese ?

Wanting to change up the regular Mac and cheese this year. What are some of your favorite meats or other things to add into the dish?

Brown some ground beef and then cook diced onions down in the drippings. Add meat and onions to your mac.

get a link of smoked sausage and split it in half, then split the halves into quarters and slice then 1/4" long, it goes great with it

There's a place in Birmingham that I think has recently closed or is closing soon that called theirs the Three Little Pigs. I was prosciutto, bacon, and pulled pork. I think the bacon was mixed in, and maybe the prosciutto as well, but the pulled pork was more on top.
