Wagyu Beef Tallow

Has anyone used this? If so, does it really make a big difference?

I've made regular and wagyu at home.

No idea how the wagyu would make any noticeable difference.

I just render down the brisket trimmings into tallow and use that when I go to wrap.

I use my trimmings and have used the wagyu and have no noticeable difference. I do enjoy the results of tallow in the wrap though.

Guilding the lilly. Beef fat is beef fat. Get Manteca and call it a day.

Yes. I use it on smoked brisket and beef ribs. Put in foil pan on the smoker about an hour before you are ready to wrap and actually smoke the tallow. Pour over brisket when you wrap. Win.

I got some wagyu beef tallow from the meatatory.

I melted down the tallow with some bone marrow garlic butter and mixed with some beef stock and injected into a brisket. Best brisket i ever made.

I see it mentioned in sausage making and grinding with venison.

I’ve tried both and there wasn’t much of a difference. The best tallow comes from around the kidneys and is rendered in an oven until the trimmings turn golden brown like a cracklin.
