Because when you are at a restaurant that is $100 a head you have multiple waiters. You basically have a head waiter and an assistant waiter. They split the tips along with the bar tenders.
You also get a much better quality waiter that memorizes all of the specials and takes pride in their job/profession and ensuring you have a pleasant experience.
Instead of the nasty arse hipster, with multiple nose and face piercings that is covered in tattoos that typically brings and screws up the burger order. Talking to you Elsies!

Depends. When you're charging $20 for a mixed drink, I'm definitely not tipping 20% on that. $6-$7 drinks? Sure I'll go 20% on that.

Shite restaurants are charging $100 a head left and right and they expect you to pay gratuity no matter the food or service quality. This is the issue, gratuity is no longer tied to quality, it's expected. If you think paying $100 per head excludes you from this scam then you're a sucker.

Some really cheap people in this thread. Tip if they give good service. Tip big if they give great service. Stay home and eat and drink if you don’t want to tip.

Dude, something as casual as the Fiery Crab can run $100 per head. They aren't running multiple waiters to my table and updating me on today's wine list

I’ve always done $1-$2 a drink unless I’ve ordered something that takes some doing on their part. Handing me a beer or a whiskey double neat doesn’t take much effort.

When I am ordering at the bar, usually just beers, I will throw the bartender 1 dollar for my first beer, but after that, I don't usually tip.
I never understood why I would tip every time. She's just opening the beer? I would do it myself if I could.

Well in that case you should be asking yourself why you're willing to pay so much for shitty food instead why you have to tip so much!

Really doing the people who depend on the system a disservice.
Case in point: an OT baller who is nevertheless niggardly sits down and plays the big man and orders his table of 4 three rounds of $40 a dram Scotch then when they get the $480 tab they figure if they had ordered $5 well the bill would be $60 so since there was no more work aside from reaching higher to get the bottle they will tip $12 and the server should be happy. The problem is the server's 3% tipout is based on receipts, not actual tips, so the server gets to pay $2.40 for the privilege of serving them.
I dislike tipping culture; build it into the price, that way the servers get what they should, and everyone pays for their service.
