I've had all except for choipique, ponce and chadron.

You forgot Oyster Dressing and stuffed artichoke.

I lived in Baton Rouge for 18 months as a child, and I scored a 38. A fair amount of those things are just Southern, particularly coastal Southern.

And I see a few things I need to try making...

I'm born and raised in Western PA and the only one I haven't tried yet is chadron. Not too bad for a Yankee!

Gateau de sirop is an old fashioned syrup cake. Steen’s, in my experience.

No, Ponce is actually edible!!
The only choupique i've had is caviar, and I don't know what Maudlin is. Never had a Hand Grenade. Had everything else.

Ha. I would definitely try Ponce.
I have had caviar and roe before, but not from a bowfin. When I looked up choupique, it said it was bowfin eggs. I have caught a bowfin, but we let the critters eat it.

Ponce is a pig stomach stuffed with meat and cooked.

I've had everything on that list except choupique.
