yuuup, and absolutely delicious. Basically when sliced, it tastes like a meatloaf using seasoned sausage. The stomach is used as a casing to hold the meat together when cooking. I fix it several times per year and buy the smoked ponce from LeJuenes in Eunice or T-Boys in Mamou.

Only ones I’m sure I’ve never had were chadron and maudlin. I’m not sure if I’ve had choupique or gateau de syrup, but I probably have. I’ve definitely eaten everything else on that list.

all except swamp rabbit and chadron (and I was born a Yankee) - I have had rabbit & squirrel stew that a neighbor prepared, but I don't know the source of the rabbit?

Chadron is the only one that I haven't had. Though, my parents harvested a thistle and gave it to a relative the other day to eat. I had never heard of that.

Never had Ponce but I'd eat it. Sure looked good sitting next to that rice and gravy.
Not sure what Maudlin is, may have eaten it.
Eaten plenty of Garfish Boulettes in a brown gravy over rice. Smoked Garfish as well.
Pain Perdu, some may call it Lost Bread or French Toast. No need for the syrup or powdered sugar on mine.
Oyster Pie and Crawfish Pie are some other family meal favorites.

That's not really limited to just Louisiana, though. Then again, re are some others on the list that aren't, either.
The reason I created this one is because I've had friends on social media who posted other lists which were very basic, bragging and congratulating each other that they had eaten them all. Then I posted this one and they were like, "I've never even heard of some of that stuff"

It's basically a large andouille, popular in the Vacherie area. I only know of one guy who was still making them, and he recently passed.

Never had an opportunity to eat that or ponce but I would try both. Unless something has a bad smell I will normally try anything or eat what is served.
