Bon Appetit video following Parkway Bakery GM Justin Kennedy on a typical day.

In 1 weekend they go through 700 loaves of french bread.
Fry 500lbs of shrimp a day.
Cook 1 ton of chuck roast a week for roast beef.

Watched this earlier.

Old boy said the amount of fried shrimp they drop each time is enough for 5-6 sandwiches then he loaded the same amount on one po-boy.

This video needs to play on every electronic billboard in Baton Rouge to show you yahoos how to make a poboy and stop thinking Rocco knows what he’s doing because he’s from Chalmette.

watched this earlier today and was amazed at these numbers considering one loaf makes 3 large or 6 small sandwiches.

That’s my #1 reason for loving Parkway. Yeah, it’s good food and one of the best tasting poboys I’ve ever had. But they aren’t stingy at all with the shrimp. It’s like Five Guys fries in the bag except a mound of top quality fried shrimp.

I need to see for sure how they season their roast beef (if at all).

RB is bland for sure, but love their other poboys

His roast beef is short of just nasty. Shrimp and everything else, he has dialed in.

This just makes me hungry. Never been to Parkway, but the po boys look great. Here in Atlanta, we have one place (The Po Boy Shop) that my New Orleans-raised boss says is legit. All I know is that their po boys are great, as is their seasoned fries and bread pudding.

He was referring to the amount of shrimp in the fry basket, not the amount that the fry cook placed in the pan from the basket, and the pan is what he puts on the sandwich. Not the whole fry basket.

He claims in video that the Toast beef and fries Po’boy was the original made for the striking workers. I know I have read multiple accounts that it was ham and cheese

Yeah that's one subject that will never have a definitive answer. It's probably the most well-known and popular po boy joint though.
